Milmyeon was created during the Korean War. Refugees who missed the taste of Hamheung-style naengmyeon (cold buckwheat noodles) made noodles using wheat flour instead of buckwheat, which was difficult to find in Busan at the time, and milmyeon became a local food in Busan. Haeundae Gaya Milmyeon boils brisket, shank, native chicken feet, ginger, onion, garlic, and various herbal medicines for 48 hours to create their broth. Then, the broth is aged for more than a year. A bowl of chewy milymeon noodles is served in a refreshing, icy broth topped with pickled radish, cucumber, boiled egg, and meat garnish.
